Origin Story
Born on the steep, mist-shrouded slopes of the Colombian Andes, this coffee captures the purest traditions of high-altitude viticulture. Grown between 1,200 and 2,000 meters, the dramatic climate shift—warm days and freezing nights—slows cherry maturation. This acts as a natural pressure cooker, concentrating dense sugars and unlocking a sparkling, vibrant acidity.
At the heart of this lot is a classic trinity of heirloom Coffea arabica varieties:

Hand-harvested at peak ripeness and meticulously sorted under the Semo designation for optimal size uniformity, these dense beans demand a precise roast.
The Medium Roast profile is chosen to strike a flawless harmony. By completing the roast shortly after the "first crack," the roaster preserves the crisp, fruity terroir of the high-altitude Typica and Caturra, while fully caramelizing the rich, deep sugars of the Bourbon.
