How long does coffee stay fresh?

Freshly squeezed orange juice lasts 2 hours.

Freshly baked bread lasts 2 days.

How long does freshly roasted coffee last?

One month... typically.

Fresh vs Stale Coffee Beans

The lifecycle of a coffee bean's flavor depends heavily on degassing - the process where trapped carbon dioxide escapes after roasting.

If you brew too early, that escaping gas creates a barrier that pushes water away, leading to uneven extraction, sharp acidity, or a sour cup. If you wait too long, oxygen takes over, leading to oxidation which makes the coffee taste flat, woody, or stale.

The peak freshness for roasted coffee is 2 weeks for darker roasts post-roast, whereas up to 2 months for lighter roasts. Degassing slows down enough for water to evenly extract the coffee's natural sweetness and origin characteristics.

The coffee beans fade 1 month after roasting darker roasts, and will fade 3 months after roasting for lighter roasts. The coffee loses its vibrancy entirely, tasting flat, generic, or paper-like.

Your roast depth changes the cellular structure of the bean, which alters how fast it degasses. Dark roasts are more porous and fracture easily. They degas rapidly and open up quickly, often peaking between 10-20 days. Light roasts remain dense and tightly packed. They release gas much slower and actually benefit from a longer rest, often peaking 1-2 months post-roast.

To get the most out of your beans, store your batches in airtight containers with one-way degassing valves. This safely lets the CO₂ vent out without letting oxygen creep in.

Now you know the journey behind the beans, now go and taste the difference.
